This super easy and festive Pumpkin Veggie Tray is a healthy Halloween party platter that’s fun to make with the kids! It uses carrots for the bright orange color, cucumber slices for the mouth, celery sticks for the stem, a pepper for the nose, and small bowls filled with hummus dip for the eyes!

Halloween is my second favorite holiday of the year, just behind Christmas. In fact, it sometimes sneaks into the number one spot.

I love all of the adorable kids dressed in their costumes, the fall hay rides, fresh apple cider, and visits to the pumpkin patch on crisp autumn days.

In our house, we plan for Halloween early. I start asking the kids what they want to BE at the start of August.

As soon as Halloween decorations and treats make their appearance in stores, and the rest of the public rolls their eyes, I start snatching things up.

Last year I bought the kids their costumes in early August. We had a Harry Potter and a Batman. The great thing about getting the kids their costumes so early is they get to play dress up in them for several months before we even to get the BIG DAY!

We sure do get our moneys worth!

The one thing I’m not so keen on when it comes to Halloween is the abundance of sugar and processed treats.

Healthy Halloween Party Platter

It’s nice to at least have one tray of healthy veggies to munch on in the midst of all the candy! It’s an easy vegan appetizer you can prepare in no time!

That’s where this cute and festive pumpkin veggie tray comes into play!

It’s super adorable, fresh, delicious, easy to put together and it’s 100% vegan, sugar free, and full of nutrients!

The kids have no problem gobbling up the veggies and hummus because it’s in the face of a pumpkin! I mean, what’s cooler than that!

Ingredients You Need

  • 2 lb bag of baby carrots
  • 1 celery stalk
  • Gluten-Free Hummus
  • English cucumber cut into thin slices
  • Mini bell pepper

Tools and Equipment You Need

  • Large circular platter-I used a round black platter to stay in the orange and black colors for Halloween.
  • 2 small round bowls-You’ll use these small round dipping bowls to put your hummus or other favorite veggie dip.

How to Make a Pumpkin Veggie Tray

Step 1: Spread baby carrots over the tray so that the entire tray is covered in orange carrots. It doesn’t matter if they’re a little haphazard, as long as the tray is covered in orange.

Step 2: Thinly slice English cucumber. Place over the carrots in the shape of a smiling mouth. You won’t need the whole cucumber, but you can slice the entire cucumber and add more throughout the night as the cucumber slices disappear.

Step 3: Prepare Gluten-Free Hummus or use store bought hummus, and place in small bowls, centering them in the middle of the tray for the eyes.

Step 4: Slice one celery stalk into three separate pieces. Arrange at the top of the tray to look like a stem.

Step 5: Place one mini bell pepper in the center of the tray for the nose. Serve and enjoy!

Variations

  • Different Dips: If you’d prefer a different dip, you can make a vegan ranch, or try this vegan tzatziki.
  • Different Veggies: Use different veggies to create the face based on what you like. Black olives would make great eyes, or a nose.

  • Use fresh veggies.
  • Prepare and wash veggies just before you’re ready to serve to retain freshness.
  • Prepare the hummus in advance to save time.
  • Store leftover veggies in an air tight container in the refrigerator for 2-3 days.

    Was trying to put my email in for the vegan cook book!But then the thing disappeared from my screen & I can’t find where to do it at again!?My youngest is highly allergic to dairy/milk & moderately to eggs(he can have them baked into things)!
