plant-based meal plan

I love Halloween! It’s one of those holidays where adults can’t help but feel like a kid again. I still get excited about planning the perfect costume, and the perfect Halloween menu of course!

One thing I’m not crazy about when it comes to Halloween is ALL the candy. Don’t get me wrong, I love chocolate. But the amount of candy, sugar and treats that are loaded onto my kids during Halloween leaves me spinning.

I have no problem with them enjoying the joys of trick-or-treating, but all the other candy and sweets they’re given throughout the Halloween season is a bit much.

When I was coming up with a fun and healthy Halloween snack I decided to put the sugary sweet treats to the sidelines in my effort to bring a little balance back to this holiday.

My vegan sugar-free rice cakes are festive, cute, and delicious without any added sugar.

Monster Rice Cakes

Ingredients: Rice cakes, avocado spread, carrots, chia seeds, cucumber, red pepper hummus.

Instructions: Spread the avocado spread evenly over the rice cake. Slice carrots (I used baby carrots) into circles. Use two circular carrots for the eyes.Break apart a small crumb from the blue tortilla chips to use as the center of the eyes. Using hummus stick the two circular carrot pieces to the outside of the rice cake to make the bolts. Sprinkle chia seeds on top of the rice cake to make the hair (about 1 tsp), and a small amount of chia seeds in a line to make the mouth.

Bat Rice Cakes

Ingredients: Rice cakes, tortilla chips, cucumber, red pepper hummus.

Instructions: Spread a small amount of hummus on the back corner of the tortilla chips to act as glue to stick onto the rice cake in the center with the tips of the triangles of the tortillas touching. Cut carrots into circles. Spread a bit of hummus on the back of the carrots and stick on top of the tortilla chips. Cut cucumber into small circle of square and place on top of carrots. You can use a bit of hummus to help them stick.
