3 Healthy Vegan Halloween Snacks

Easy, healthy vegan Halloween snacks made with rice cakes and allergy friendly ingredients and no-sugar. These festive rice cakes include a pumpkin, monster, and bat! Kid friendly and great for parties.

Ingredients

  • 3 rice cakes
  • ¼ cup red pepper hummus
  • 2 tablespoon avocado spread
  • 1 tbsp chia seeds
  • 1 carrot
  • 1 cucumber
  • 3 blue tortilla chips

Instructions

  • Pumpkin: Spread the roasted red pepper hummus evenly over the rice cake. Take a blue tortilla chip and break it into five small triangles. Arrange two the small triangles to make the eyes, one triangle to make the nose, and the last remaining triangles to make the mouth. Thinly slice a cucumber to make the stem.
  • Monster: Spread the avocado spread evenly over the rice cake. Slice carrots (I used baby carrots) into circles. Use two circular carrots for the eyes.Break apart a small crumb from the blue tortilla chips to use as the center of the eyes. Using hummus stick the two circular carrot pieces to the outside of the rice cake to make the bolts. Sprinkle chia seeds on top of the rice cake to make the hair (about 1 tsp), and a small amount of chia seeds in a line to make the mouth.
  • Bat: Spread a small amount of hummus on the back corner of the tortilla chips to act as glue to stick onto the rice cake in the center with the tips of the triangles of the tortillas touching. Cut carrots into circles. Spread a bit of hummus on the back of the carrots and stick on top of the tortilla chips. Cut cucumber into small circle of square and place on top of carrots. You can use a bit of hummus to help them stick.
