This dark chocolate vegan mug brownie with chocolate chips is perfection in 60 seconds! Moist, fudgy, oil-free, and refined sugar-free it’s a guilt free chocolate treat!

I’m a sucker for brownies! I just love them, I mean who doesn’t love brownies, am I right? I prefer them over cake and cookies any day of the week.

However, we all know brownies are not the healthiest choice. We’d all do better opting for some fresh fruit or sliced veggies when we need a snack, but sometimes there’s just no denying your brownie craving!

You know those days when you come home from work stressed and exhausted. Or maybe it’s Saturday and you’ve spent the whole day doing laundry and trying to entertain your kids while they scream and run through the house like wild animals. These are the sorts of days that drive me to chocolate!

And that’s when this vegan mug brownie comes to my rescue. It’s a healthier plant-based dessert, so you don’t need to feel too guilty!

If you have time, and want to share brownies with family and friends, you can make my Healthy Vegan Brownies. They are also super fudgy and delicious, but if you want a brownie and you need it stat, this vegan mug brownie is your new best friend!

It’s one serving of brownie goodness mixed in a mug, microwaved for 60 seconds, done! Oh, yeah, and did I mention it’s a whole food plant-based version so even though you’re indulging in chocolate, you don’t need to feel one twinge of guilt!

  • Cocoa Powder
  • Coconut Sugar
  • Baking Powder
  • Almond Butter

  • Vanilla Extract

How to Make A Vegan Mug Brownie

Step 1: In a mug add whole wheat flour, cocoa powder, coconut sugar, and baking powder. Stir to combine ingredients.

Step 2: Add almond butter, maple syrup, almond milk, and vanilla extract. Stir until batter is smooth without any lumps and all dry ingredients have been combined with wet ingredients. Batter will have a thick and sticky consistency. If batter is too dry add an additional tablespoon of almond milk until you get a wet sticky consistency.

Step 3: Top with chocolate chips.

Step 4: Place mug in the center of the microwave. Microwave on high for 60 seconds.

Step 5: Carefully remove (mug will be hot), allow to cool for a few minutes. Optional: Sprinkle with sea salt. Enjoy!

Tips for Making a Vegan Mug Brownie

  • Use high quality organic ingredients.
  • Mix dry ingredients prior to adding wet ingredients.
  • Mix wet and dry ingredients until smooth. Avoid lumps.
  • Should have a smooth yet sticky consistency.
  • Add additional tablespoon of almond milk if batter is too thick.

Is a Vegan Mug Brownie healthy?

While it’s not as healthy as a fresh piece of fruit, or carrot sticks, this brownie is a healthier version than others.

  • Whole Food Plant-Based Ingredients-This recipe doesn’t contain any refined ingredients. No refined white flour, no refined sugars, and no oil.
  • High in Fiber-Believe it or not, this brownie recipe is high in fiber thanks to the whole wheat flour. You’ll get 20% of your recommended fiber from this sweet treat!
  • High in Monounsaturated Fat-Monounsaturated fat is the good kind of fat you get from nuts, seeds, and avocados. This recipe uses raw almond butter providing these healthy fats, and reducing the saturated fat to less than 2 grams.

A mug cake or mug brownie is a single serving of cake or brownie mixed in a mug and baked in the microwave. It’s fast, easy, and totally delicious. You get all the best parts of a cake or brownie without having to go to the effort of dirtying a bunch of dishes, or making more than you need!

    Best consistency of a mug cake that I have ever made!! Microwaved for 50 seconds which was perfect. Let it cool down. It tastes way better. I love that this recipe has no oil/butter.
