Substitutions and Variations
- You can use peanut butter or any of your other favorite nut butter varieties instead of almond butter.
- Agave or molasses can be used in place of maple syrup. Be sure you DO NOT use blackstrap molasses. It’s too bitter.
- You could make full-size snowmen by creating three cake balls going from small to medium to large. Be aware that you must make more dough and use more chocolate.
How to Make Melted Snowman Truffles
- Combine the truffle dough ingredients in a food processor and pulse until thoroughly combined.

- Scoop and roll the dough into 12 to 14 balls using a small cookie scoop.

- Microwave the white chocolate at 30-second intervals, stirring between intervals until melted.
- Dip the balls in the melted white chocolate using a fork, and tap off the excess. Then, place them on a baking sheet lined with parchment or wax paper.

- Before the white chocolate has set, add the hat and the carrot sprinkle nose.
- Use black vegan buttercream in a piping bag to create the eyes and the mouth.
- Let the snowman cake pops cool at room temperature until set and hardened, and enjoy!

FAQ
Vegan chocolate is a variation made with plant-based milk alternatives instead of regular milk, cream, or honey. Many varieties of dark chocolate are already vegan, but finding vegan white chocolate can be tricky. I recommend the King David brand.
High-quality vegan chocolate is usually indistinguishable from traditional chocolate. The key words here are “high-quality”. Cheap vegan chocolate uses lower-grade ingredients and will generally not taste like “real” chocolate.
Expert Tips
- Use high-quality vegan chocolate for this recipe. With vegan chocolate, you get what you pay for.
- Your dough will be very crumbly, but that’s okay! It will hold together when you roll it into balls.
- Because these snowman truffles have a raw center, it’s essential to use blanched almond flour, which is safe to eat raw.
- Give your truffles a gentle tap after coating them in white chocolate to ensure a smooth and pretty coating. BE GENTLE so the cake ball doesn’t fall.
