Melted Snowman Truffles

These melted snowman truffles are an adorable, healthy alternative to traditional truffles with an almond coconut center coated in melted white chocolate with simple yet adorable decorations. They're delicious, fun, and festive while also vegan and gluten-free!

Ingredients

  • 1 cup almond flour blanched
  • cup almond butter unsalted
  • 1 cup unsweetened shredded coconut
  • 2 tablespoon maple syrup
  • 1 teaspoon vanilla extract

Decorations

  • vegan baking white chocolate
  • vegan buttercream colored black
  • carrot sprinkles
  • mini Oreos
  • mini candy Santa hats
  • coated chocolate candies

Instructions

  • Combine the almond flour, coconut shreds, almond butter, maple syrup, and vanilla extract in a food processor. Process until thoroughly combined and the ingredients form a ball. The dough will be crumbly but stick together when rolled into a ball.
  • Scoop one tablespoon of dough using a small cookie scoop. Roll into 12-14 balls.
  • Add the vegan white chocolate to a microwave-safe mixing bowl and microwave in 30-second increments, stirring between intervals until the chocolate is melted.
  • Dip the balls into the melted chocolate, rolling them around to cover them entirely. Place extra melted choclate around the bottom of the ball to resemble melted snow.
  • Add your choice of hats-Mini Oreos, mini candy Santa hats, or candy-coated chocolates. Place on the truffle before the chocolate has set so that it will stick. Use an orange sprinkle and place it in the center of the snowman’s face for the nose.
  • Using a small piping tip, pipe the eyes and mouth.
  • Allow to set for 10-20 minutes. Enjoy!

    • Use high-quality vegan chocolate for this recipe. With vegan chocolate, you get what you pay for.
    • Your dough will be very crumbly, but that's okay! It will hold together when you roll it into balls.
    • Because these snowman truffles have a raw center, it's essential to use blanched almond flour, which is safe to eat raw.
    • Give your truffles a gentle tap after coating them in white chocolate to ensure a smooth and pretty coating. BE GENTLE so the cake ball doesn't fall.
    • Store for up to 4 days in an airtight container at room temperature or for up to a week in the fridge.
