Who says soup only has to be enjoyed during the winter months? I love a good soup or chili all year long. Maybe that’s because I have a tendency to always have a bit of a chill, even in the summer months!
There are so many different types of vegan soup recipes. Depending on your mood, the time of year, the produce that’s in season, or what you have in your pantry, you can easily whip up a soup in no time at all.
Now that we also have these handy dandy appliances like the slow cooker and instant pot, you can take a few shortcuts, and have dinner ready with very little effort. Soup is an excellent vegan prep meal idea!
Even if you have meat-eaters in your home as I do, you can create a hearty and comforting soup and nobody will miss the meat!
Why is soup a healthy plant-based meal?
Soups are a great way to sneak tons of veggies into your meal. This ensures you’re getting an adequate serving of veggies, and also keeps the calories and fat down.
All those added veggies mean you’ve increased the nutrient content of your meal in a very simple way.
Vegan soup recipes also call for ingredients such as beans, rice, and pasta. These ingredients provide some added texture and heartiness. But they also add plant protein and fiber. Be sure to use whole-grain pasta and brown rice to increase fiber content.
Creamy vegan soups often use coconut milk to create that smooth and luxurious texture. Coconut milk adds healthy fats!
The one thing you need to be careful of when it comes to soup recipes is their sodium content. If using vegetable stock, use low sodium, or make your own so that you have more control over the amount of salt that is added.

If you’re the type of home chef that likes to create your own recipes with the ingredients you have in your fridge and pantry, then you’re in luck! Soup is such an easy and simple recipe that only needs a few important components.
Step 1: Choose Your Ingredients
Choose your base: When it comes to making vegan soup your choices come down to vegetable stock, tomato puree, or coconut milk. In some cases, you may also be able to use other dairy-free milk to create a creamy texture, but coconut works best in soup due to its fat content.
Choose a plant protein: This is optional as some soups don’t need a plant protein but it does provide your soup with some heartiness, and texture. When it comes to vegan soup your choices are beans, lentils, split peas, quinoa, sometimes tofu, or soybeans.
Choose your veggies: Many vegan soups start with sautéed onions and garlic, then add carrots and celery to create a mirepoix. When choosing your veggies go with what is in season. In the winter you may choose butternut squash, sweet potatoes, carrots, etc. In the summer months, you have fresh zucchini, tomatoes, green beans, and more! I also like to add leafy greens to my soups such as spinach and kale.
Choose a grain: If you’d really like to make a hearty soup consider adding a whole grain such as brown rice, quinoa, or whole wheat pasta.
Choose your spices: Now you can really get creative when you choose your spices. This is what creates the flavor and makes your soup unique and delicious! Refer to some of the spice suggestions above.
Step 2: Choose your Method
Creating a delicious vegan soup is easy! It doesn’t require a ton of skill, and there are many different methods you can use.
Going the traditional route?
Cooking your soup on the stovetop is the most traditional and common way to make soup.
Looking for a quick soup recipe?
Try using the Instant Pot! In under 30 minutes, you can have a delicious soup that is flavorful and tastes like it’s been simmering on the stove all day!
Don’t have time to cook in the evening?
Use your slow cooker! Throw your ingredients into the slow cooker in the morning, turn it on, and walk away. You’ll have a scrumptious soup in a few hours with very little time and effort on your part.
Want a smooth and creamy soup?
Use your high-speed blender, or immersion blender to create deliciously creamy and smooth soups in minutes!
Step by Step Instructions:
Depending on the type of method you choose your directions may differ slightly. The directions below are for a simple stovetop recipe.
Step 1: Heat a large pot over medium-high heat. Add ¼ cup of vegetable stock, water, or olive oil. If starting with a mirepoix add onions, sauté until translucent, then add carrots and celery, and any other aromatic vegetables.
Note: I usually use vegetable stock to sauté my vegetables to keep my recipes oil-free and plant-based.
Step 2: Add your spices. Stir and sauté for an additional 3 minutes until they become aromatic.
Step 3: Add your base whether that be vegetable stock, tomato puree, or coconut milk. Add in your additional vegetables and plant protein.
Step 4: Add in your grain (if using). Cover and allow to simmer until vegetables and grains are cooked through. Some soups require a shorter simmer time, while others require a longer 1-2 hours.
Step 5: Adjust the flavors. Taste and add additional salt, pepper, and spices to your liking.
