Red Onion: Thinly slice one red onion.
Fajita Seasoning: The simple seasoning for these fajita veggies is dried oregano, salt, and pepper. You can add other dried herbs if you like.
Olive Oil: The veggies are sautéd in olive oil. If you are looking for an oil free option, sauté in water, vegetable stock, or soy sauce. If you choose to use soy sauce eliminate the added salt.

Prepare the Vegetables: Slice the green peppers into thin strips, and thinly slice the red onion.
Sauté the Vegetables: Heat a large skillet over medium-high heat. Add the olive oil, red onions, and green peppers. Sauté for 1-2 minutes until softened.
Add the Seasoning: Add the oregano, salt, and pepper. Stir the vegetables to evenly coat with the seasonings. Sauté an additional 2-4 minutes.
