Copycat Chipotle Fajita Vegges

  • 2 medium green peppers
  • 1 small red onion
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Prepare the Vegetables: Slice the green peppers into thin strips, and thinly slice the red onion.
  • Sauté the Vegetables: Heat a skillet over medium heat. Add the olive oil, red onions, and green peppers. Sauté for 1-2 minutes until softened.
  • Add the Seasoning: Add the oregano, salt, and pepper. Toss the vegetables to evenly coat with the seasonings. Sauté an additional 2-4 minutes. Serve warm.

Tips for Making Copycat Chipotle Fajita Veggies
  • Don't overcook the vegetables. You want them to have a bite, and not be too soft so that they add a nice texture to your recipes.
  • Feel free to add different types of bell peppers or additional vegetables such as zucchini, yellow squash, or eggplant. 
  • If you don't like onion, you can leave it out. Substitute with two cloves of garlic to give the veggies some added flavor.
  • Allow the veggies to cool and come to room temperature. Transfer them to an airtight container. Store in the refrigerator for up to 5 days.
