What is tofu?
Tofu is made from soy beans. It is also called bean curd. It is made by pressing condensed soy milk into blocks. The process is similar to cheese making.

You don’t have to use a press to absorb the extra water. You can place your block of tofu between paper towels with a heavy pan or other object on top.
The challenge with this process is that you need to consistency change the paper towels as the water is absorbed. You also need to do a bit of a balancing act as you try to level a heavy pan or book on top of a small block of tofu.
Using a press allows the water to release from the block more easily. No need to balance or change paper towels. Simply leave it while you prepare the rest of your recipe, and in 20 minutes it will be ready!
What are the different types of presses?
There are two main types of presses: screw, and spring.
A screw press uses two plastic boards that are connected by large screws. Place the tofu block between the two boards, and gently screw them together until the block is secure. Tip over, and place on a plate. Every 2 minutes screw it a bit tighter. This allows the water to slowly release, and gently press the tofu.
The challenge with this type of press is that you have to be hands on nearly the entire time, as you turn the screws every 2 minutes.
A spring press allows you to drop the block of tofu into a small plastic box, and uses a spring to push the tofu down.
The water drips to the bottom of the box. The benefits of using a spring press is that there is no hands time. The water falls to the bottom of the box, and all you need to do is pour it out into the sink. You can also use the box to marinate the tofu after it has been pressed.

How to use Tofu Bud to press your tofu?
Step 1: Place your block of tofu in the box with one of the slotted planks placed on the bottom of the box. Place the second plank on top.
Step 2: Slide the white top into place. Place the spring in the center.
Step 3: Place the knob over the spring, and turn clockwise. One turn for a gentle pressure, and two turns for more pressure. Set aside for 15-20 minutes. The water will drain to the bottom of the box.
Step 4: After 15-20 minutes, drain the water from the box by pouring it out in the sink using the spout.
Step 5: Turn the knob counter clockwise to release the spring. Remove the spring from the center, slide off the white top, and remove your block of tofu. Now you’re ready to dice and marinate your tofu for your favorite recipe!

Most of the time silken tofu does not need to be pressed. But that also depends on how you plan to use it in your recipe. When you are preparing smoothies, ice creams, or sauces there is no need to press it. However, if you are preparing a savory dish you may want to gently press any extra water. Tofu Bud has two pressure levels that allows you to press silken tofu if you wish.
Most tofu does not come pressed. It is packaged in water to retain it’s freshness and moisture. However, I have seen pressed tofu at Trader Joe’s that is marinated in soy sauce and vacuum sealed. I have not seen pressed tofu in other grocery stores.
