Whole Grain Bread: When it comes to choosing the bread, opt for one that is made with whole grains. I used a whole grain sourdough bread from Trader Joe’s, and it was perfect! It was nice and toast on the outside, and chewy on the inside.
Ripe Avocado: I used half of an avocado for two slices of bread, which is one serving. Use a whole avocado for two servings. Make sure that your avocado is ripe. If not, it will have a bitter taste, and won’t be creamy enough to mash up easily with a fork.
Tomato: I used a large beefsteak tomato. They looked so good and fresh at the super market. You can also opt for cherry tomatoes, or grape tomatoes if that’s what you have on hand, or just go with what looks the best at the grocery store.
Cilantro: This makes a beautiful garnish on top, but also adds a nice herbal flavor that pairs perfectly with tomatoes and avocado.
Lime Juice: A fresh squeeze of lime juice adds a touch of acidity.
Everything But the Bagel Seasoning: If you don’t have this, get it! It’s made from sesame seeds, sea salt flakes, minced dried garlic, dried minced onion, black sesame seeds, and poppy seeds. When mixed into the avocado it brings tons of flavor with minimal effort!

Step by Step Instructions
Step 1: Place two slices of whole grain bread in your toaster. Toast until golden brown.
Step 2: Cut avocado in half. You’ll only need one half if making one serving, or both halves if making two servings. Remove pit. Sprinkle Everything But the Bagel seasoning in the center of the avocado half. Using a fork, mash the avocado flesh. Thinly slice the large tomato.
Step 3: Spread the mashed avocado on the slices of bread. Add a fresh squeeze of lime, and a bit more seasoning.
Place the tomato slice on top. Squeeze more lime juice on top of the tomato slice. Sprinkle with Everything But the Bagel seasoning. Top with fresh washed cilantro leaves. Enjoy!
