These fruit and veggie Spinach Mango Vegan Popsicles are creamy, naturally sweet and healthy too! Easy and fun to make with the kids, they’re the perfect treat on a warm day!

My kids and I love making popsicles, like my lime popsicles with coconut milk! When the weather warms it’s truly the perfect healthy treat. It only requires a few ingredients, some inexpensive popsicle molds, and patience. The patience part is the hardest for my kiddos.
I love making homemade popsicles because I have complete control of the ingredients. Store bought popsicles are often filled with sugar, artificial colors, and preservatives making them nothing but sugar water.
When we make this plant-based dessert at home I add frozen fruit, a touch of natural sweetener, dairy free milk and even some veggies!
This recipe was inspired by one of my favorite smoothies.
We had great fun mixing, blending and using up the extra spinach in the fridge. The kids got an extra serving of vegetables and didn’t even notice!
The frozen banana, mango, and maple syrup make these popsicles naturally sweet. The spinach adds extra nutrients and a beautiful green color. The almond milk and coconut yogurt make them creamy!

Ingredients You’ll Need
- 1 cup unsweetened almond milk
- ⅓ cup unsweetened coconut milk yogurt
- ½ cup frozen mango
- ½ cup frozen banana (optional)
- 2 tablespoon organic maple syrup
- 1 ½ cups fresh spinach
Tools and Equipment You’ll Need
I use my Vitamix (affiliate link) to create super creamy smoothies, and so much more. It completely blends the spinach so that there aren’t any specks of green leaves. If you do not have a high speed blender such as a Vitamix you can use a stand blender, or a food processor, but the spinach many not blend as well.
When it comes to popsicle molds I use one that I found at the Dollar Store years ago. I prefer using craft popsicle sticks to insert into the molds rather than the plastic ones that came with the set. You can use any type of mold with this recipe.
How to Make Spinach Mango Vegan Popsicles – Step by Step
Step 1: In a blender combine almond milk, and spinach. Blend on medium increasing to high until spinach is completely broken down and combined.
Step 2: Add coconut milk, mango, banana (optional), and maple syrup. Blend until smooth.
Step 3: Pour into popsicle molds. Insert popsicle sticks. If they won’t stand straight in the molds, freeze for an hour, then insert.
Step 4: Freeze for at least 3 hours, or overnight for best results.
When making this recipe with my kids, the waiting is the hardest part! We’ll often make them in the morning so that they’ll be ready for the kids to enjoy after lunch.

- No Processed Ingredients-Unlike store bought frozen treats, these are free of processed ingredients, and artificial coloring.
Top Tips for Making
- Use a high speed blender to get a perfectly smooth consistency without any tiny spinach particles.
- Use unsweetened dairy free milk of choice.
- If you don’t have dairy free coconut yogurt you can use coconut milk.
- Add frozen banana to make a creamier consistency and add extra natural sweetness.
- You may omit the maple syrup if you use banana.
Variations
You may choose to substitute other fruit for the mango and banana. Some other additions may include pineapple, or peach. Using strawberry, blueberry, or other colored fruit will change the bright green color of the popsicles, but they’ll still taste great!
How to Keep and Serve
- Popsicles will keep in the freezer for up to 2 months.
- Keep them in the molds, or separate freezer bags when storing.
- To release the popsicles from the molds run them under warm water, and gently pull until they break free.

My daughter and I made these last weekend. They are soooo delicious! I subbed pineapple in place of maple syrup for sweetness and it worked really well. I didn’t have vegan yogurt, so used a full can of coconut milk in place of that and the nut milk. It made 12 smaller popsicles and we only have one left. Making more this weekend!
