This whipped dalgona matcha latte is made without eggs making it vegan-friendly. It’s light, fluffy, and naturally sweetened served over iced coconut milk.

I have been having so much fun experimenting with matcha! Matcha is a high-grade powdered green tea. Unlike steeping tea leaves in water, you mix matcha powder with a small about of water before adding it to steamed or cold milk. The first recipe I ever tried was my Copycat Starbucks Matcha Latte! I’ve also made matcha lemonade which is super refreshing on a hot day!
But matcha can be used in other recipes besides drinks, such as matcha cookies and matcha muffins.
Today, I’m super excited to share my newest creation, a vegan dalgona matcha recipe that is prepared without egg whites! Most recipes for dalgona matcha include egg whites to create the light and fluffy foam, but aquafaba (the liquid from a can of chickpeas) is an easy and delicious substitute that creates a truly special drink! Trust me, it doesn’t taste anything like chickpeas!
🍵 What is a Dalgona Matcha?
Dalgona whipped coffee became quite popular in early 2020 on TikTok. It is made by whipping together equal parts instant coffee, sugar, and water. The word “dalgona” comes from a Korean word meaning “sweet.” When whipped together it creates a foamy coffee drink that’s sweet and beautiful.
With the popularity of dalgona coffee, it’s no surprise that dalgona matcha soon became a thing. However, the phenomenon of a foamy finish cannot be created with equal parts matcha, sugar, and water. Therefore, a different method is used to create soft peaks and a foamy texture.
Instead of water, egg whites are often used because when whipped they create a light and bubbly meringue. But, what do you do if you have an allergy to eggs, or you’re vegan? How do you create a light and fluffy foam without using eggs? The answer is super simple…aquafaba!
Aquafaba is the liquid from canned chickpeas. When whipped at a high speed it creates the same sort of meringue-like texture as egg whites. The result is an earthy, sweet, totally comforting matcha drink, you’ll come to covet!

🥣 Ingredients and Notes
Aquafaba: This is the liquid from a can of chickpeas. You only need two tablespoons, so drain the rest of the aquafaba, and store it in the refrigerator to use for another recipe, perhaps a vegan lemon meringue pie. Then rinse the chickpeas, and place them in an airtight container to use in another recipe, perhaps this chickpea curry!
Matcha Powder: I highly recommend you use a high-quality matcha powder. Especially since this is a drink. When cooking recipes it’s not as important since there are so many other ingredients involved, but high-quality matcha is essential for any drink recipe.
Hot Water: Combine the matcha and warm water together to create a liquid. This is important because matcha does not blend as well with milk, and it clumps easily. So whisking the matcha with water, eliminates clumps, and helps it to incorporate into the foam.
Maple Syrup: A sweetener is needed, and I always recommend maple syrup. It’s natural and has an intense sweet flavor.
Coconut Beverage: I like mixing my dalgona with coconut milk because it’s slightly sweet. However, you can use any dairy-free milk such as almond milk, or oat milk.

No Aquafaba: If you don’t have aquafaba or don’t care if your drink is vegan then use one egg white.
Different Sweeteners: You can also use equal parts powdered sugar, or cane sugar.
Double the Recipe: This recipe makes one drink. If you would like to serve more than one person, then double the recipe.
📋 Instructions to Make Dalgona Matcha
Step 1: Add the matcha powder to a small bowl with warm water. Whisk or stir together until all the clumps have been removed, set aside.
Step 2: Add aquafaba to a medium mixing bowl. Using a hand mixer, beat the aquafaba until it triples in size, and stiff peaks form. You should be able to turn the bowl upside down without anything falling out. This will take 5-8 minutes.
Step 3: Add the maple syrup. Whip with the mixer for another minute.
Step 4: Add the matcha and water mixture. Whip for another 1-2 minutes.
Step 5: Fill a glass with ice. Pour the coconut beverage on top of the ice. Scoop the matcha foam with a spoon or small spatula, and add it to the top of your coconut milk. Enjoy!
💭 Expert Tips for Dalgona Matcha with No Egg
- Use fresh aquafaba, meaning, open a fresh can of chickpeas.
- Be patient when whipping the aquafaba. It takes 5-8 minutes for stiff peaks to form.
- If you are having trouble getting the aquafaba to thicken into a mergingue like consistency, add ¼ teaspoon of cream of tarter.
- When you add the maple syrup and the matcha the density of the meringue will decrease slightly. That’s okay, and totally normal.
- Be gentle with the foam when adding it to your iced milk. A small spatula works nicely to scoop the foam and add it to the top of your milk.
- Enjoy immediately. The foam will deflate as it sits at room temperature.

Yes, you can make whipped matcha without sugar. Whipped matcha is different from dalgona coffee. The combination of equal parts instant coffee, water, and sugar creates the whipped phenomenon. However, with matcha, you need to use aquafaba or egg white. This will whip up nicely without any sugar added.
It has a sweet and earthy flavor. When paired with milk, it has a creamy, sweet vibe.
You can use a metal whisk to whip the aquafaba, however, it’s going to take a lot of elbow grease! I wholeheartedly recommend using an electric mixer, or a stand mixer with the whisk attachment.
You can use coconut cream to create whipped cream with matcha. However, when you make coconut whipped cream, you will need to refrigerate the can of coconut cream overnight, and only use the cream that has risen to the top. You can also whip heavy cream, but then this recipe would no longer be vegan or dairy-free.
Yes, matcha does have caffeine. This recipe has 1 teaspoon of matcha per serving, which is about 70 grams of caffeine, which is a bit less than 1 cup of coffee.
