Vegan Christmas Cookies (One Bowl)

These easy vegan Christmas cookies are a decorated take on vegan sugar cookies. They are simple to make and only require a handful of ingredients. Impress your friends and family with these sugar cookies, topped with vegan buttercream and holiday sprinkles.

Ingredients

  • ½ cup vegan butter room temperature
  • ½ cup cane sugar
  • ¼ cup brown sugar
  • ¼ cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup vegan buttercream frosting colored or white
  • Christmas sprinkles

Instructions

  • Add the room-temperature vegan butter, cane sugar, and brown sugar to a large mixing bowl. Cream together until light and fluffy using a hand mixer or stand mixer.
  • Add the vanilla extract and applesauce. Beat together on high for one minute.
  • Sift together the flour, cornstarch, baking powder, and baking soda.
  • Slowly add the flour to the butter mixture until the flour is completely incorporated.
  • Cover and chill the cookie dough for 30 minutes.
  • Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  • Add one tablespoon scoops of the chilled dough to the prepared baking sheet 2 inches apart to leave room for spreading.
  • Bake for 10-12 minutes on the center rack or until lightly golden brown on the bottom.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completly.
  • Once cooled, spread the vegan buttercream on top of each cookie ad top with holiday sprinkles.

Notes

Tips for Making Vegan Christmas Cookies
  • Set the butter out on the counter at least an hour before you plan to start making the cookies. This way, it has time to come to room temperature.
  • Be sure to chill the dough before baking. This will allow them to spread nicely.
  • Store in an airtight container at room temperature for up to 5 days. After that transfer to the refrigerator, or freeze.
