- 2 cups unsweeneted soy milk
- 1 cup silken tofu
- ¼ cup pure maple syrup
- 1 teaspoon vanilla extract
- ½ tsp ground nutmeg
- ½ teaspoon ground ginger
- 1 teaspoon cinnamon
- ¼ teaspoon turmeric optional
- 2 ounces brandy or rum optional
- cinnamon sticks for serving
Add the soy milk, silken tofu, maple syrup, vanilla extract, nutmeg, ginger, cinnamon, and turmeric (if using) to a blender. Blend until completely smooth and creamy.
Serve it cold or transfer the contents to a saucepan and heat over medium-low to a gentle simmer.
If using, add a splash of brandy to your mug or glass, pour the eggnog on top, and give it a gentle stir.
Top with a dash of nutmeg and a cinnamon stick.
Serve the drink hot or cold.
- There's no need to simmer the eggnog before serving it. However, simmering will deepen the flavors a bit.
- If you simmer your eggnog, keep the heat low and not let it boil.
- This drink makes four servings, but you can multiply it by as much as you'd like to serve more family and friends.
- Store for up to 2 days in the refrigerator in an airtight container.
- Reheat in a saucepan over medium heat.
