Miso Noodle Soup

This miso noodle soup is a quick and easy dish packed with flavor and health benefits. Vegetables and noodles swim in a delicious broth packed with umami flavor from the miso, making a dish that's healthy as it is flavorful.

Ingredients

  • 1 tablespoon sesame oil
  • 1 inch fresh ginger grated
  • 1 clove garlic minced
  • 1 cup mushrooms sliced
  • 1 teaspoon chili paste
  • 4 cups low-sodium vegetable broth
  • 4 ounces rice noodles
  • 3 tablespoon miso paste
  • 1 tablespoon soy sauce or tamari (gluten-free)
  • ½ cup firm tofu cubed
  • 1 cup bok choy roughly chopped
  • 2 green onions sliced for garnish
  • 1 teaspoon sesame seeds for garnish

Instructions

  • In a medium saucepan saute grated ginger and garlic in seseme oil for 1-2 minutes or until fragrant.
  • Add the mushrooms and chili paste to the pot and stir. Saute for another 2-3 minutes.
  • Add the vegetable broth to the pot. Bring to a gentle simmer.
  • Add the noodles to the simmering broth and cook according to the noodle package instructions (usually around 4-5 minutes for rice noodles).
  • While the noodles are cooking, place the miso paste in a small bowl and add a ladleful of the hot broth. Whisk until the miso dissolves to create a smooth mixture. Set aside.
  • Add the tofu and spinach or bok choy to the pot when the noodles are almost done. Cook for another 1-2 minutes until the greens are wilted.
  • Remove the pot from heat. Stir in the dissolved miso mixture and soy sauce, if using, until well combined. Do not boil the miso, as it can lose its flavor and beneficial properties.
  • If desired, ladle the soup into bowls and garnish with sliced green onions, sesame seeds, and nori strips.

  • Add quick-cooking veggies like snap peas, shredded carrots, or corn for extra flavor and color.
