Apple Cinnamon Overnight Oats

These apple cinnamon overnight oats are an easy, sweet, and healthy start to your morning. Oats, chia seeds, apples, nuts, and maple syrup for natural sweetness create a vegan breakfast loaded with complex carbs, protein, and all the sweet, delicious flavors of fall.

Oats

  • 2 cups rolled oats
  • ¼ cup chia seeds
  • 1 cup plain Greek coconut milk yogurt
  • 2 cup plant milk
  • 2 teaspoon ground cinnamon divided
  • 1 teaspoon ground nutmeg divided
  • 2 teaspoon vanilla extract
  • 2 tablespoon maple syrup

Cinnamon Apple Topping

  • 2 tablespoon vegan butter
  • 2 Honeycrisp Apples cored and diced
  • 2 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 2 tablespoon maple syrup

Instructions

  • Add all of the ingredients for the oats to a blender. Blend until smooth and creamy.
  • Pour the mixture evenly into four glass containers.
  • Dice the apples, removing the core and the seeds.
  • Melt the vegan butter over medium heat in a saucepan.
  • Add the apples and sprinkle with cinnamon, nutmeg, and maple syrup. Stir to combine. Lower the heat and simmer for about 5 minutes or until softened.
  • Top the oats with the apple mixture.
  • Cover the jars and refrigerate overnight.
  • In the morning, top with chopped walnuts or pecans if desired, and sprinkle with cinnamon.

Tips for Making Apple Cinnamon Overnight Oats
    • Don't mix the nuts into your overnight oats until you serve them. If you mix them in overnight, they'll get soft and mushy.
    • It's essential to make these overnight oats with rolled oats. Quick oats will get overly mushy and gelatinous due to the way they're processed.
    • Store the oats in a container with a tight-fitting lid, such as these mason jars or these adorable overnight oat jars.
    • Store any leftovers in an airtight container for up to 4 days in the fridge.
    • Reheat in the microwave for 30 seconds if desired.
