Air Fryer Carrots

These air fryer carrots are seasoned with garlic, salt, and pepper. A touch of olive oil roasts them to perfection. Serve topped with fresh herbs!

Ingredients

  • 1 lb rainbow carrots or baby carrots
  • 1 teaspoon garlic
  • ¼ teaspoon salt
  • teaspoon pepper
  • 1 teaspoon olive oil or use vegetable stock if avoiding oil
  • 2 tablespoon fresh parsley finely chopped

Instructions

  • Slice the carrots into strips that will fit your air fryer basket, or roast whole if your air fryer basket is large enough.
  • Combine the carrots, olive oil, garlic, salt, and pepper in a mixing bowl. Toss with clean hands until well combined.
  • Place the carrots in the air fryer in a single layer.
  • Roast at 375° Fahrenheit for 20 minutes, tossing at the 10-minute mark. Carrots are ready when they are slightly golden brown, crispy, and cooked all through.
  • Serve warm and crispy as is or drizzled with your favorite sauce. My vegan tahini dressing pairs nicely.

  • Look for fresh, firm carrots with vibrant orange color. The fresher the carrots, the better the flavor and texture.
  • Try to cut the carrots into similar sizes and shapes to ensure even cooking. This helps them cook uniformly, preventing some pieces from being undercooked or overly crispy.
  • Experiment with different seasonings to add flavor to your carrots. Don't be afraid to get creative! The options are endless, from simple salt and pepper to spice blends, herbs, honey, or glazes. Just distribute the seasoning to coat all the carrot pieces evenly.
  • Don't overcrowd your air fryer. Place the carrots in a single layer so that they cook evenly.
  • The cooking time and temperature may vary depending on the size and thickness of your carrot pieces. Start with a moderate temperature (around 375°F/190°C) and adjust as needed. Keep an eye on the carrots and check for your desired level of crispiness. If required, you can extend the cooking time slightly.
  • These carrots taste best served hot and crispy out of the air fryer.
  • If you like your carrots softer, roast for an additional 5 minutes or until fork tender.
