Summer Berry Salad

A summer berry salad with spinach and arugula and an oil free maple dijon vinaigrette gives you the best of both salad worlds, fruits and greens. The maple dijon vinaigrette adds a hint of spice complimenting the sweetness of the fruit and the peppery arugula.

  • 2 cups organic arugula
  • 2 cups organic spinach
  • ½ cup organic strawberries quartered
  • ½ cup organic blueberries
  • ½ cup organic raspberries
  • 2 mini cucumbers chopped
  • ½ cup raw almonds chopped
  • 2 tbsp lemon juice
  • 1 tbsp pure maple syrup
  • ½ tsp Dijon mustard
  • ½ tsp garlic minced
  • ½ inch fresh ginger grated
  • salt and pepper to taste


  • Wash greens and get rid of excess water using a salad spinner. On a serving platter spread the fresh spinach and arugula on the bottom.
  • Top with quartered strawberries, chopped almonds, blueberries, apple chunks, cucumber chunks, and raspberries. (I like to put them in pretty colorful rows.)
  • For the dressing, squeeze about half a lemon in a small bowl, whisk in maple syrup, water, and Dijon mustard. Using a garlic press, mince two cloves of garlic about ½ tsp.Finely grate the fresh ginger using a lemon zester or cheese grater.Season with salt and pepper to taste.
  • Pour dressing over salad just before serving.
