Tips for Making Copycat Chipotle Fajita Veggies
- Don't overcook the vegetables. You want them to have a bite, and not be too soft so that they add a nice texture to your recipes.
- Feel free to add different types of bell peppers or additional vegetables such as zucchini, yellow squash, or eggplant.
- If you don't like onion, you can leave it out. Substitute with two cloves of garlic to give the veggies some added flavor.
- Allow the veggies to cool and come to room temperature. Transfer them to an airtight container. Store in the refrigerator for up to 5 days.
