Air Fryer Potato Wedges

These simple air fryer potato wedges are a healthy alternative to French fries. Made with Yukon Gold Potatoes, Italian seasoning, garlic powder, onion powder, salt and pepper these air fryer potato wedges come out crispy on the outside, and soft on the inside.

  • 4 Yukon Gold Potatoes
  • 1 tbsp olive oil optional
  • 1 teaspoon Italian Seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Wash and clean the potatoes. Cut the potatoes into wedges by slicing into quarters.
  • Place them in a medium sized bowl. Sprinkle with herbs, salt, pepper, garlic, and onion powder, and olive oil.
  • Spread the wedges evenly inside the air fryer. Don't overcrowd. If you have a small air fryer you'll need to cook in batches.
  • Bake in the air fryer at 400 F for 15 minutes, tossing halfway through the cooking process. If you have a larger air fryer and are making a large batch cook for 20 minutes, and toss at the 10 minute mark.

Tips for Making Air Fryer Potato Wedges
  1. Use Yukon Gold Potatoes or Russet potatoes. Yukon Gold has a nice creamy texture that gives a soft pillowy inside of these potato wedges.
  2. If you have a small air fryer (like I do) you'll need to make the potato wedges in batches. However, if you have a larger air fryer you'll have more room.
  3. It's important not to overcrowd the potato wedges in the air fryer so that they cook evenly.
  4. Make sure to toss the wedges halfway through the cooking process so that they become crispy on all sides.
Variations and Substitutions
  • Different types of Potatoes: For large wedges use Russet potatoes. They will also crisp up nicely in the air fryer, but because of their larger size, you'll get larger wedges. Red potatoes will also work well if you buy the larger ones that you can cut into wedges. The smaller ones are better for making roasted potatoes.
  • Seasoning: Feel free to play with the seasoning. If you like a bit more spice add a touch of cayenne or chili powder. If you like a smoky flavor add some paprika. You may also substitute the Italian seasoning with fresh herbs!
  • No Oil: If you choose, you can eliminate the oil altogether, however, be aware that you won't achieve the golden brown look. You can also lightly spray these with cooking spray if you prefer.
  • Bake in the Oven: If you don't want to use your air fryer, you can bake these wedges in the oven at 400 F, for 20 minutes, turning at the 10-minute mark.
