Ingredients

  • 4 tablespoon white whole wheat flour
  • ½ teaspoon baking powder
  • teaspoon salt
  • 2 tablespoon coconut sugar
  • 3 tablespoon coconut milk or other plant milk
  • 1 tablespoon applesauce
  • 1 teaspoon vanilla extract

Instructions

  • Whisk together flour, baking powder , salt, and coconut sugar in a mug or small bowl that's at least 3 inches in diameter and 2 inches tall.
  • Add the coconut milk, vanilla extract, and applesauce. Stir together until combined. Smooth out the top.
  • Place in your microwave on high power for 90 seconds.
  • Allow to cool a few minutes, top with your favorite topping such as coconut whipped cream, and vegan sprinkles.
