- 4 tablespoon white whole wheat flour
- ½ teaspoon baking powder
- ⅛ teaspoon salt
- 2 tablespoon coconut sugar
- 3 tablespoon coconut milk or other plant milk
- 1 tablespoon applesauce
- 1 teaspoon vanilla extract
Whisk together flour, baking powder , salt, and coconut sugar in a mug or small bowl that's at least 3 inches in diameter and 2 inches tall.
Add the coconut milk, vanilla extract, and applesauce. Stir together until combined. Smooth out the top.
Place in your microwave on high power for 90 seconds.
Allow to cool a few minutes, top with your favorite topping such as coconut whipped cream, and vegan sprinkles.
