Vegan Truffles

These vegan chocolate truffles only require two main ingredients! Coat them in nuts, coconut, cacao powder, or sprinkles for a beautiful finish!

Ingredients

  • 8 ounces vegan dark chocolate chips or dark chocolate bar chopped
  • ½ cup coconut cream

Instructions

  • Pour dark chocolate chips into a heat safe bowl. Or finely chop vegan dark chocolate bar.
  • Over medium heat bring ½ a cup of coconut cream to a boil. Remove from heat immediately.
  • Pour the coconut cream over the chocolate chips.
  • Using a spatula, stir the cream and chocolate together until smooth and combined.
  • Place the chocolate in the refrigerator for one hour or until it is solidified.
  • Scoop 1 tablespoon of ganache, and roll in your hands to create a ball.
  • Roll the balls in finely chopped nuts, cacao powder, shredded coconut, or coating of your choice.

Notes

Tips for Making Vegan Truffles
  • Use quality dairy-free dark chocolate. 
  • Be sure to use coconut cream.
  • The ganache needs to cool and solidify before rolling into balls. You want it soft enough to roll, but not too soft so that it melts in your hands if the ganache is too hard to scoop place it in the microwave for about 5-10 seconds.
  • If the ganache gets too soft, place it back in the refrigerator to cool.
  • Store in an airtight container at room temperature for up to to 2 months.
