Lime Popsicles

Sweetly tart lime popsicles are made with just a few simple ingredients! It's like a key lime pie in popsicle form! Totally creamy, and decadent, yet healthy, and low in sugar! They are a refreshing way to cool off on a hot summer day!

Ingredients

  • 15 oz full fat coconut milk canned
  • ¼ cup plain coconut milk yogurt
  • cup organic cane sugar
  • 2 tablespoon lime zest about 2 limes
  • ¼ cup fresh lime juice about 2 limes

Instructions

  • In a large glass mixing bowl, combine coconut milk, coconut milk yogurt, and sugar. Whisk until sugar is dissolved.
  • Add the lime zest and the lime juice. Whisk to combine. Adjust the amount of lime zest and juice depending on how much lime flavor you like.
  • Add two drops of natural food coloring (optional), to give your pops a green lime hue. Whisk together until the coloring is fully incorporated.
  • Transfer the liquid to a measuring cup with a spout. Pour the liquid into the molds all the way to the top. Depending on the size of your molds you will get 4-6 popsicles.
  • Place the popsicle sticks in the molds (some molds have them attached), or use popsicle sticks. Freeze for a minimum of 2 hours.
  • When ready to enjoy run the popsicle under warm water to release it from the mold. Enjoy!
