Lime Popsicles
Sweetly tart lime popsicles are made with just a few simple ingredients! It's like a key lime pie in popsicle form! Totally creamy, and decadent, yet healthy, and low in sugar! They are a refreshing way to cool off on a hot summer day!

- 15 oz full fat coconut milk canned
- ¼ cup plain coconut milk yogurt
- ⅓ cup organic cane sugar
- 2 tablespoon lime zest about 2 limes
- ¼ cup fresh lime juice about 2 limes
In a large glass mixing bowl, combine coconut milk, coconut milk yogurt, and sugar. Whisk until sugar is dissolved.
Add the lime zest and the lime juice. Whisk to combine. Adjust the amount of lime zest and juice depending on how much lime flavor you like.
Add two drops of natural food coloring (optional), to give your pops a green lime hue. Whisk together until the coloring is fully incorporated.
Transfer the liquid to a measuring cup with a spout. Pour the liquid into the molds all the way to the top. Depending on the size of your molds you will get 4-6 popsicles.
Place the popsicle sticks in the molds (some molds have them attached), or use popsicle sticks. Freeze for a minimum of 2 hours.
When ready to enjoy run the popsicle under warm water to release it from the mold. Enjoy!
