Grapefruit Mimosa

This grapefruit mimosa is a twist on the classic brunch cocktail! Sweet and tangy fresh grapefruit juice is combined with sparkling wine, and a sprig of thyme for a beautiful and easy special occasion drink!

Ingredients

  • 1 bottle dry champagne sparkling wine, or prosecco chilled
  • 2 cups fresh squeezed grapefruit juice chilled
  • 6 sprigs fresh thyme optional
  • 6 wedges of grapefruit for garnish

Instructions

  • Juice 2 cups of grapefruit juice using a juicer. Or use store bought grapefruit juice. Chill grapefruit juice and champagne before serving.
  • Fill each champagne flute halfway with champagne while tilting the glass at a 45 degree angle to reduce foam.
  • Top the champagne with grapefruit juice.
  • Garish with a wedge of fresh grapefruit, and a sprig of fresh thyme. Enjoy!

Tips for Making Grapefruit Mimosas

  • Chill your juice and champagne before making your cocktails!
  • Pour the champagne into your flute first. Angle the glass at 45 degrees while pouring to reduce foam.
  • Add the juice after you've poured the champagne.
  • Use freshly squeezed juice if possible. It will have less sugar and a more fresh and authentic grapefruit flavor.
  • Use another favorite fresh fruit juice such as pomegranate, papaya, cranberry, or peach nectar for a fun variation!
  • Change up the champagne. Any sparkling wine will do, opt for a dryer Brut, or a sweeter sparkling rosé for another drink option.
  • Depending on whether you choose to squeeze your own grapefruit juice, which is what I recommend, or use store-bought juice, you may want to slightly change the ratio of juice to champagne.
  • Store-bought grapefruit juice is higher in sugar, so if you use store-bought, then I recommend using less juice and more champagne.
  • If you squeeze your own grapefruit juice, you won't have any added sugar, so go ahead and use a 1:1 ratio of juice to champagne.
