Yellow Onion Garlic Carrots Yukon Gold Potatoes Mushrooms Peas Green Beans Tomato Paste Basil, Oregano, Thyme Salt & Pepper

Step 1

Sauté onions in garlic over medium heat for 3-5 minutes.

Step 2

Add carrots, potatoes, mushrooms, vegetable stock, tomato paste parsley, basil, oregano, thyme, sea salt, and pepper. Bring to a boil.

Step 3

Reduce heat to a simmer. Cover and cook for 20-25 minutes or until potatoes are tender.

Step 4

Stir in peas and green beans. Simmer an additional 5 minutes.

Step 5

Serve topped with fresh chopped parsley.
