Potato Cauliflower Soy Milk Vegan Butter Garlic Onion Mushrooms Lentils Peas and Carrots Vegetable Stock Tomato Paste Sage, Oregano, Thyme Paprika, Salt, Pepper

Step 1

Boil potatoes and cauliflower until tender. Drain. Add soy milk, butter, garlic, salt, and pepper. Mash with a potato masher. 

Step 2

Add vegetable stock, diced onions and garlic. Sauté for 3-5 minutes of until onions become translucent. Add mushrooms. Cook for 3 minutes. 

Step 3

Add the cooked lentils, the rest of the vegetable stock (about ¾ cup), tomato paste, spices, salt, and pepper. Add the peas and carrots. 

Step 4

Layer the lentil mixture in a 9X13 pan. 

Step 5

Top with mashed potatoes and cauliflower. Bake for 15 minutes at 350 F. 

Step 6

Top with fresh herbs.
