– 2 medium sweet potatoes peeled and thinly sliced –  ½ cup red onion finely diced – 1 tablespoon olive oil – ¼ teaspoon black pepper – ½ teaspoon salt – ½ tsp garlic

Peel the sweet potatoes, chop them into thin rounds, then cut them into quarters. Finely chop the red onion

Heat a non-stick pan or cast-iron skillet over medium heat. Add olive oil, and red onion. Sauté until translucent.
