Super Bowl  Vegan Bean Dip

Ingredients:

Pinto Beans Vegetable Stock Onions Garlic Chili Powder Cumin Salt Cilantro

Step 1

Sauté onions and garlic in 1/4 cup of vegetable broth for 3-5 minutes or until onions are translucent.

Step 2

Add chili powder, cumin, and salt to the pan. Stir to combine, and heat for a minute to allow flavors to meld together.

Step 3

Add cooked beans to the pan. Stir to combine. Cover and heat on low for 5 minutes.

Step 4

Add ½ cup of vegetable. Mash beans using a potato masher. Add an additional ¼-1/2 cup of vegetable stock achieve the creaminess you desire.

Step 5

Optional: Top with onions and cilantro, tomatoes, and fresh lime juice.
