Lentils Carrots Onions Celery Garlic Vegetable Stock Cumin Salt & Pepper

Step 1

Add 1/4 cup of vegetable stock to a large pot over medium heat. Add diced yellow onion, and cook for 3-5 minutes.

Step 2

Add the diced carrots, diced celery, and minced garlic. Cook an additional 3 minutes to soften. Add spices and cooke an additional minute. 

Step 3

Run the red lentils under water in a colander until the water runs clear. Add the lentils to the pot. Stir to combine.

Step 4

Add vegetable stock and water. Bring to a boil. Reduce the heat to a simmer. Cover and cook for about 20 minutes.

Step 5

Pour in the lemon juice. With an immersion blender, blend the soup until you reach your desired consistency.
