Vegan Broccoli  Cheddar Soup

Vegetable Stock Yellow Onion Garlic Broccoli Florets Coconut Milk Nutritional Yeast Ground Mustard Ground Turmeric Salt & Pepper Cornstarch

Step 1

Heat ¼ cup of the vegetable broth over medium heat. Add the diced onions and minced garlic. Sauté for 3-5 minutes or until the onions are translucent.

Step 2

Add chopped broccoli, vegetable broth, and coconut milk. Bring to a boil. Reduce heat and cook for about 8 minutes.

Step 3

Reduce heat to low. Stir in the nutritional yeast, ground mustard, turmeric, salt, and pepper. Stir to combine.

Step 4

In a small bowl whisk together the cornstarch and almond milk.

Step 5

Pour the flour mixture into the pot. Stir to incorporate. Increase the heat and continue to simmer until thickened. Take off of the heat, and serve.
