Step 1
Add the flour, and salt to a large bowl. Whisk together to combine.
Step 2
Add chilled vegan butter. Cut the butter into the flour until it resembles a coarse meal.
Step 3
Add the vinegar and water. Start with ½ a cup of water.
Step 4
Gather the dough together, and knead gently
Step 5
Chill in the refrigerator while you prepare the filling.
Step 6
Make the filling. Cook onion and garlic until translucent, about 3 minutes.
Step 7
Add black beans and spinach. Cook an additional 5 minutes.
Step 8
Add all of the spices and frozen corn. Cook an additional 3 minutes.
Step 9
Remove dough from the refrigerator. Roll out to 1/4 inch thickness.
Step 10
Cut out into 4 inch circles.
Step 11
Place 2-3 tbsp of filling onto each circle.
Step 12
Fold over and pinch close using a fork.
Step 13
Bake for 20 minutes at 350 F.
