Super Easy 5 Ingredient Vegan Energy Balls
I love mornings! But afternoons? That’s another story! These chocolate peanut butter vegan energy balls are my go-to treat when I hit an afternoon slump.
Me Time Mornings
One of the things I relish is “me time” mornings. I’m awake before the light, and the rest of the house is still snug and cozy in their beds. I wake up before the sun no matter the time of year. It began after I had my first son when I was awake at all hours of the night with a hungry baby. Luckily, those sleepless nights have passed, but I continue to naturally wake up before 6:00 am nearly every morning, and I’ve come to cherish the “me time” hour. It is a stark contrast to the rest of the day when the house is vibrating with the noise from the screaming squeals of my children.
While I start my day with quiet, and allow myself to slowly awake drinking my hot coffee, writing in my journal, and turning my attention inward, my afternoon is categorized by controlled chaos. My boys have taken on a new game that includes wrestling, chasing, hiding in closets, and slamming doors.
Afternoon Energy Boost
That time between school letting out and sitting down to dinner is when I need an energy boost. However, more caffeine is not the answer, but these energy bites, hit the spot! And I have to admit I’ve had them for breakfast too!
Not only are they a tasty treat between meals, they pack a protein punch with organic natural peanut butter, Bob’s Red Mill Gluten Free Oats and ground flax! They’re just the thing to hold me over between school letting out and sitting down for dinner.
They deliver on energy, fill the tummy, and I feel like I’m treating myself!

Another thing I love about these energy balls is that they’re all natural, whole food ingredients, and I can prepare them in under 10 minutes. Not only that, my kids love them too! The fact that they have dark chocolate chips doesn’t hurt either!
When making these energy balls, you’ll need a medium size mixing bowl. I like these ceramic mixing bowls. They come in beautiful shades of blue and three perfect sizes (small, medium, and large). I also like to use a spatula to mix the ingredients because it helps combine the sticky batter without it getting stuck to the sides of the bowl. I like this spatula set that comes in 4 different sizes. To get the perfect uniform balls, use a tablespoon scoop!
Chocolate Peanut Butter Vegan Energy Balls
- 1/2 cup Natural Organic Peanut Butter
- 1/2 cup Ground Flax Seeds
- 1 cup Organic Oats Bob’s Red Mill is Gluten Free
- 2 tbsp Organic Maple Syrup
- 1/2 cup Organic Semi-Sweet Chocolate Chips
- Combine peanut butter, flax seeds, oats and maple syrup. Stir until well combined. The consistency will be a bit on the dry side. Mix in the chocolate chips. Using a small small tablespoon (ice cream) scoop, scoop a spoonful of the mixture and roll into balls.
